Curcumin is a chemical component extracted from the rhizome of some plants in the family Zingiberaceae and Araceae. As a natural pigment, curcumin is widely used as a coloring agent in food field. Meanwhile, curcumin has the effects of lowering blood fat, anti-tumor, anti-inflammatory, choleretic, anti-oxidation, etc. Curcumin is orange yellow crystalline powder with slightly bitter taste. It is insoluble in water. In food production, it is mainly used for coloring sausage products, canned products, sauce and brine products, etc
