Alpha-cyclodextrin is a non-reducing cyclic saccharide comprised of six glucose units linked by alpha-1.4 bonds. It is produced by the action of cyclodextrin glucosyl transferase on hydrolysed starch syrups. The cavity of alpha-cyclodextrin is less than beta-cyclodextrin, so it is used to allow formation of inclusion complexes with little molecules. The solubility degree of Alpha-cyclodextrin in water is 14.5 g/100ml @ 25°C, so the situation that needs high solubility of cyclodextrin.

Uses of α -cyclodextrin Food Grade:
In the food industry, alpha cyclodextrin (also known as alpha dextrin) can provide a new purely plant-based option for stabilized oil-in-water emulsions. It also enhances wet and dry foaming of proteins, and when used as a foaming agent, creates new mousse desserts that contain no fat or milk proteins at all. Alpha-cyclodextrin is used as a soluble dietary fiber and has health benefits. Eating a starchy meal containing alpha-cyclodextrin reduces the rise in blood sugar after a meal. Cyclodextrins have other uses in food manufacturing, including masking bitter tastes, stabilizing fragrances and improving bioavailability of active ingredients.
